Directly supervises the cook, kitchen worker and inmates assigned to the dining room. Responsible for the preparation of facility meals in accordance with pre-planned menus, in compliance with MTC and customer directives. Essential Functions: 1. Prepare and cook quantity of food required according to menu and number of inmates. 2. Maintain kitchen equipment in orderly workable condition.
