Job description

Assists Lead Butcher in proper fabrication of all meats, fish and poultry to hotel specifications. Cuts, trims, bones, ties, and grinds meats, using butcher's cutlery and powered equipment, such as electric grinder and band saw, to portion and prepare meat in cooking form. May estimate requirements and requisition or order meat supply. May receive, inspect and store all products upon delivery. May record quantity of meat received and issued to cooks. May clean fowl and fish. 1 - 3 years in fabrication of meat, fish and poultry Ability to use hand tools, stand or walk for extending periods, lift heavy items, and work in cold environments Knowledge of meat preparation techniques and cuts Must have the ability to provide our guests with excellent customer service, Excellent communication skills and observation skills Have an easygoing demeanor to ensure a fun and safe environment for our guests - Follow Sanitation Safety Procedures and Daily Sanitation Guidelines - Utilize proper hand washing techniques - Uniform must be clean and presentable - Utilize sanitizer at work station and document (wash, rinse, sanitize) - maintain temperature log - cook to and hold time; includes hot and co...
