Oversee and coordinate the set-up, service and breakdown of assigned functions, maintaining high standard of service. Attend Banquet Event Order meetings to review plans of action for banquet events. Receive room function assignment and review BEO for any last minute changes. Ensure all functions are posted correctly on the event board. Greet guest upon arrival. Supervise service staff on the floor. Assign servers and set-up staff their duties and stations for each function. Direct and oversee the service of assigned functions. Know the menu for each function and be able to explain the ingredients and preparation method. Communicate with Executive Chef to ensure accurate count of guests seated.
