Description Job Summary: Bourbon & Bones – Square One Concepts is seeking a reliable and efficient Sushi cook to join the team. The ideal candidate will have a passion for creating exceptional dishes using high-quality ingredients and precise cooking techniques. This position requires someone who is detail-oriented, organized, and able to work in a fast-paced environment. Duties/Responsibilities/Sushi preparation and technique: - Hand-rolls, nigiri, sashimi, and specialty Nigiri variations with exact fish-to-rice balance. - Skillful knife work (slicing, filleting, and portioning) to optimize texture and flavor. - Source and inspect fish and seafood for freshness; manage inventory, rotation, and proper storage. - Maintain pristine station setup, tools, and mise en place for lunch and dinner services. - Execute meticulous plating that reflects the restaurant’s aesthetic and seasonal themes. - Communicate clearly with chefs, servers, and sommeliers to ensure a seamless dining experience. - Build and plate all rolls, nigiri, and sashimi to established recipe specifications and presentation standards on every cover. - Maintain consistent speed and output during high-volume service witho...
