Please note that Long Beach Amphitheater employees are covered by a collective bargaining agreement with Unite Here Local 11, and union membership is a condition of employment. Cook Lead: The Cook Lead is responsible for providing direction to the cooks on the production of all assigned menu items, ensuring that they are being completed in an efficient and consistent manner while following Legends’ specifications, recipes and technique and maintaining sanitation standards. Primary Responsibilities: - Follows Executive Chef, Sous Chefs and/or Culinary Supervisors assignments for opening and closing procedures and food preparation. - Prepares food items by complying with portion size, quality standards, departmental rules, policies and procedures, ensuring teams are doing the same. - Maintains HACCP standards ensuring a high-quality level of food, food temperatures, rotation of product, cleanliness and sanitation standards. - Maintains cleanliness of kitchen including walk-in coolers, dry storage, shelves, walls, floors and drain...
