Harrah’s Cherokee Casino Resort Position Description POSITION TITLE: Steward DEPARTMENT: Banquet, Employee Cafeteria, Selu Garden Cafe, The Smokehouse Coop, Gordon Ramsay, Guy Fieri, Room Service Cherokee Tower, Italian GRADE/FLSA STATUS: H6—Non-Exempt BADGE TYPE/COLOR: Work Permit—Peach REPORTS TO: Steward Supervisor, DR Senior Steward JOB SUMMARY: The primary function of the Steward position is to clean and sanitize all dishes and silverware used by guests. Maintain all kitchen equipment and environment according to health department code. Keep banquet areas clean and sanitized. JOB ESSENTIAL DUTIES AND RESPONSIBILITIES: . Prepare tableware for washing, i.e. scrapes plates, pre-soak silverware, places all items to be washed in their proper dishwasher rack . Set up dishwashing machine, i.e. drains closed, tanks filled, temperatures at correct level, detergent at proper level . Wash, stack and store china in appropriate kitchen area . Clean dishwashing equipment and working areas . Collect all soiled pots, washes and restacks cleaned pots on shelves . Responsible for all removal of garbage and refuse . Mop and sweep floors .
