Role Overview Sodexo is seeking an Executive Chef 2 for Paul's Run Retirement Community located in Northeast Philadelphia, Pennsylvania . This 450 resident upscale continuing care retirement community offers a restaurant style menu to the residents utilizing a 90% fresh farm to table mentality. This Executive Chef will oversee all aspects of the culinary operations including catering and a retail Bistro. The Executive Chef will lead and develop a culinary team of 15. Typical shift is 10:00am - 7:00pm, may vary with every other weekend coverage. What You'll Do: - Train and mentor the culinary staff; - Implement and standardize all culinary systems and procedures for the dining services: Catering, Retail menu, production, puree standardization, FMS sheets, inventory control, HACCP, cleaning schedules, staffing plans, presentation and quality of food, kitchen cleanliness, safety, etc. Sodexo standards will be the benchmark; - FMS: monitoring, Audits, implementation and standardization for new menus; - be responsible for Food and Physical Safety and annual training for all hourly associates; - implement innovative and fresh ideas in retail, catering and dining services; and - create in...
